Chef Daniel’s Pan-Seared Scallops and Citrus Vinaigrette

I N G R E D I E N T S:
- Small Cubes of Watermelon
- Small Cubes of Honeydew
- 2 Blood Oranges
- 1 Cara Cara Orange
- 1 Lemon
- 3-4 Large Scallops
- Wasabi Masago
- Kaiware Sprouts
- Olive Oil
- Vinegar
- Salt
- Pepper
I N S T R U C T I O N S F O R V I N A I G R E T T E:
- Cut the watermelon into small cubes.
- Cut honeydew into small cubes.
- (Optional) Put watermelon and honeydew through a vacuum sealer to get a translucent color.
- Cut around the edges of the Cara Cara Orange until it is fully peeled. Repeat this step for the blood oranges and the lemon.
- Once all fruits are peeled, cut out 3-5 crescent shapes of each fruit, and squeeze the juice into a mixing bowl.
- Add olive oil and vinegar, keeping the ratio to 2 parts Olive Oil and 1 part Vinegar (2:1).
- Add a dash of salt and pepper to taste.
I N S T R U C T I O N S F O R S C A L L O P S:
- Heat some oil on a flat non-stick pan at high heat.
- Once smoke starts coming from the pan, lower the stove to medium heat, and add 3-4 Scallops.
- While the scallops are cooking, start plating your dish with the watermelon and honeydew cubes.
- Once the pink color of the scallops is almost gone, flip each scallop, revealing a toasty brown color on each side.
- Once each side of the scallops is a toasty brown color, remove them from a pan and onto a plate.
- Top each scallop with Wasabi Masago, and add each to the dining plate.
- Add the sliced-up fruit from your vinaigrette to the dish, then pour over the vinaigrette.
- Finish your dish by adding a few stems of Kaiware Sprouts.
- Take a picture and enjoy!
